Veggie Quinoa Bowl


A fresh, healthy bowl is one of my favorite go-to meals! This Veggie Quinoa Bowl is light and refreshing yet hearty and filling at the same time!


The best thing about this bowl is that you can use any veggies you want, really! Make it as is, or use what you have on hand. The dressing is delicious and pairs well with most veggies.


Veggie Quinoa Bowl Total estimated time: 15 minutes

Ingredients:

  • 4 cups cooked quinoa (can be served warm or cold)

  • 1 cup finely chopped kale

  • 2 small tomatoes, finely chopped

  • 1 red bell pepper, finely chopped

  • 1 cucumber, finely chopped

  • 1⁄4 cup chopped green onions

  • Salt & pepper to taste

  • Red pepper flakes (optional garnish for heat)

Dressing Ingredients:

  • Zest and juice from 2 limes

  • 2 tbsp coconut aminos

  • 2 tbsp olive oil

  • 1 tbsp apple cider vinegar

  • 2 cloves garlic, minced

Directions:

  1. Combine quinoa, kale, tomatoes, peppers, cucumber and green onions in a large mixing bowl

  2. Add the dressing ingredients to the mixing bowl

  3. Mix well with large spoon and serve into bowls

  4. Add salt and pepper to your preference.

  5. Garnish with red pepper flakes (optional). Enjoy!
