Healthy Snacks for Mom - Zesty Kale Chips



Have you ever noticed a majority of the snacks we purchase and even prepare are geared towards kids?! And often, if we are buying them for school lunches or snacks, they aren't healthy. And then mom ends up snacking on them, too!


That's why I'm creating this Healthy Snacks for Mom recipe series!


We are kicking it off with Zesty Kale Chips! Why Zesty Kale Chips... because if you have young kids they usually don't like spicy things, so mom actually gets to eat them! :) And because, Kale is incredibly healthy, as it’s loaded with fiber and antioxidants like quercetin and kaempferol.

These compounds decrease blood pressure and may reduce your risk of colon cancer.

A 1-cup (67-gram) serving of raw kale provides more than 100% of the DV for vitamins A, C, and K!


INGREDIENTS

  • 4 cups organic Tuscan Kale, cleaned and roughly chopped into 1" to 3" pieces

  • 2 tbsp of almond butter, creamy and unsweetened

  • 3 tbsp tahini

  • Juice of 1 lemon

  • 1 tsp ground cumin

  • 1 tsp ground cayenne pepper

  • 1.5 tsp turmeric

  • 1 tsp garlic powder

  • 2 tsp Himalayan pink salt

  • 1 tsp cracked pepper


INSTRUCTIONS

  1. Preheat oven to 300 degrees F.

  2. Place kale into a large bowl, making sure the leaves are dry.

  3. In a separate bowl, whisk together the remaining ingredients, creating a thick dressing.

  4. Pour the dressing mixture over the kale. With your hands, massage the dressing into each leaf.

  5. Spread kale out over a non-stick baking sheet, making sure there is one thin layer of kale.

  6. Bake for 45 minutes and remove from oven. The kale will be crispy and golden brown.

  7. Enjoy!
